Abstract

This thesis presents modeling and simulation process regarding premium chocolate ice cream production using SuperPro Designer. Unit procedures, unit operations and operating conditions are required before modeling the process flow diagram (PFD) for premium chocolate ice cream production. Ice cream production is divided into three parts (Part A, B and C). Part A deals with raw materials through mixing and pasteurization process; Part B involves processing of ice cream ingredients which consists of homogenization, cooling, ultrafiltration and aging process, while Part C is the ice cream product handling section which includes freezing or whipping, heat exchanging and filling process. PFD for premium chocolate ice cream production was successfully simulated in this study. Results on Materials and Streams, Economic Evaluation, Itemized Cost and Environmental Impact
Analysis were obtained.
