Abstract

Natural colorants have become a demand in the cosmetic industry for their exquisite value in health, hygiene and safety thus, urges human to conduct many researches or medicinal practices to expose other potential colorants properties. On this researches its objective is to find optimum solvent to extract Clitoria ternatea, Pandanus amaryllifolius, and Hylocereus polyrhizus while determine the stability of pigment in a variety of parameter. In this preliminary investigation, part of plants (Clitoria ternatea. Pandanus amaryllifolius, and Hylocereus polyrhizus) used such as flower, leaves and flesh according to plant species. All the plants were extracted with two different solvents; water and 96% ethanol solution. The changes of colour intensity due to storage condition were monitored for five days with a UV/V is spectrophotometer at 520 nm. Results revealed that heat and light is not affecting the discolouration of the betalain, chlorophyll and anthocyanins degradation and water can extract a very concentrated solution which is suitable to be used for colorants. Natural plant, which were investigate in this study have been showed to be a novel rich source for colorant, but the samples shows that they didn't have a stable properties. Further research is needed to overcome this problem.
